For the Salad:

  • 2 cups cooked chicken (shredded or cubed)
  • 2 cups romaine lettuce (chopped)
  • ½ cucumber (diced)
  • 1 cup grape tomatoes (halved)
  • ¼ cup red onion (finely chopped)
  • ½ cup Kalamata olives (sliced)
  • ½ cup pepperoncini peppers (sliced)
  • ½ cup feta cheese (crumbled)

For the Tzatziki Dressing:

  • 1 1/8 cups plain Greek yogurt
  • 23 garlic cloves (pressed)
  • 2 tablespoons fresh dill (chopped)
  • ½ cucumber (grated and squeezed to remove excess water)
  • 2 tablespoons olive oil
  • Juice of ½ lemon
  • Salt and pepper to taste

Instructions

  1. Grate and Squeeze: Grate the cucumber and use a clean kitchen towel or paper towel to squeeze out as much water as possible to prevent the dressing from becoming watery.
  2. Mix the Ingredients: In a medium bowl, combine the Greek yogurt, grated cucumber, pressed garlic, fresh dill, olive oil, lemon juice, salt, and pepper. Mix until smooth and creamy. Taste and adjust the seasoning if needed. Set aside in the fridge to chill.
  3. Prepare the Veggies: Wash and chop the romaine lettuce, cucumber, grape tomatoes, and red onion. Slice the Kalamata olives and pepperoncini peppers.
  4. Assemble the Salad: In a large mixing bowl, combine the cooked chicken, romaine lettuce, cucumber, grape tomatoes, red onion, Kalamata olives, pepperoncini peppers, and feta cheese.
  5. Dress the Salad: Drizzle the prepared tzatziki dressing over the salad. Toss gently to combine, ensuring everything is evenly coated with the dressing.
