  • 2 large eggs
  • 2 tablespoons red onion (finely minced)
  • 1 teaspoon green chili (finely minced (jalapeño or other spicy chili works))
  • ¼ teaspoon ground turmeric
  • ½ teaspoon kosher salt
  • 2 tablespoons cilantro (finely chopped)
  • ⅓ cup milk (or water)
  • 2 slices of bread (sourdough, multigrain, or whole wheat)

To Serve:

  • 2 tablespoons ketchup (green chutney, or sriracha sauce)

Instructions

Prepare the Egg Mixture:

  1. In a medium bowl, crack the eggs and whisk them together with the finely minced red onion, green chili, ground turmeric, salt, cilantro, and milk (or water).

Soak the Bread:

  1. Heat a non-stick skillet or griddle over medium heat and lightly grease it with oil or butter.
  2. Dip one slice of bread at a time into the egg mixture, making sure both sides are well-coated.
  3. Allow the bread to soak up the mixture for a few seconds, but not too long or twill become soggy.

Cook the Toast :

  1. Place the soaked bread slices onto the heated skillet.
  2. Cook for about 2-3 minutes on each side, until golden brown and crisp.

Serve:

  1. Once the bread is cooked through and golden on both sides, transfer it to a serving plate.
  2. Serve hot with ketchup, green chutney, or sriracha sauce for dipping. Garnish with extra cilantro if desired.

Notes

  • For a richer flavor, use whole milk instead of water.
  • Adjust the spice level by increasing or reducing the green chili.
  • Slightly stale bread works best as it absorbs the egg mixture without becoming too soft.
