- ⅓ cup milk (or water)
- 2 slices of bread (sourdough, multigrain, or whole wheat)

- 2 tablespoons ketchup (green chutney, or sriracha sauce)
Instructions
Prepare the Egg Mixture:
- In a medium bowl, crack the eggs and whisk them together with the finely minced red onion, green chili, ground turmeric, salt, cilantro, and milk (or water).
Soak the Bread:
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with oil or butter.
- Dip one slice of bread at a time into the egg mixture, making sure both sides are well-coated.
- Allow the bread to soak up the mixture for a few seconds, but not too long or twill become soggy.
Cook the Toast :
- Place the soaked bread slices onto the heated skillet.
- Cook for about 2-3 minutes on each side, until golden brown and crisp.
Serve:
- Once the bread is cooked through and golden on both sides, transfer it to a serving plate.
- Serve hot with ketchup, green chutney, or sriracha sauce for dipping. Garnish with extra cilantro if desired.

- For a richer flavor, use whole milk instead of water.
