Description

  • 2 tablespoons red onion (finely minced)

  • ¼ teaspoon ground turmeric
  • ½ teaspoon kosher salt
  • 2 tablespoons cilantro (finely chopped)
  • ⅓ cup milk or water
  • 2 slices bread (sourdough, multigrain, or whole wheat)
  • 2 tablespoons ketchup
  • Green chutney or sriracha sauce (optional)

Instructions

Prepare the Egg Mixture:

  1. In a medium bowl, whisk together the eggs, red onion, green chili, turmeric, salt, and cilantro.
  2. Gradually whisk in the milk (or water) to create a smooth, spiced egg mixture.

Dip the Bread:

  1. Heat a non-stick skillet over medium heat and lightly grease it with oil or butter.
  2. Dip each slice of bread into the egg mixture, making sure both sides are well-coated.

Cook the Toast:

  1. Place the soaked bread slices onto the hot skillet.

Serve:
