- 1 teaspoon of finely chopped green chili (you can use jalapeño or any other hot pepper.)

- ½ teaspoon kosher salt
- 2 tablespoons cilantro (finely chopped)
- ⅓ cup milk or water
- 2 slices bread (sourdough, multigrain, or whole wheat)
- 2 tablespoons ketchup
- Green chutney or sriracha sauce (optional)
Instructions
Prepare the Egg Mixture:
- In a medium bowl, whisk together the eggs, red onion, green chili, turmeric, salt, and cilantro.
- Gradually whisk in the milk (or water) to create a smooth, spiced egg mixture.
Dip the Bread:
- Heat a non-stick skillet over medium heat and lightly grease it with oil or butter.
- Dip each slice of bread into the egg mixture, making sure both sides are well-coated.
Cook the Toast:
- Place the soaked bread slices onto the hot skillet.
- Sear for 2 to 3 minutes per side, or until nicely browned and fully cooked.
- The toast should have a crispy exterior and a soft, spiced interior.
Serve:
- Remove the toast from the skillet and serve immediately.
- Garnish with your choice of ketchup, green chutney, or sriracha sauce for a spicy and tangy accompaniment.
