For the Salmon

  • 4 salmon fillets (6 oz each, skinless or with skin)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt & pepper to taste

For the Sauce

  • 2 tablespoons unsalted butter
  • 34 garlic cloves, minced
  • 1 cup heavy cream
  • ⅓ cup chicken broth (or vegetable broth)
  • ½ cup grated Parmesan cheese
  • ½ teaspoon chili flakes (optional)
  • ½ cup sun-dried tomatoes, chopped
  • 1 teaspoon dried basil (or Italian seasoning)
  • ½ cup fresh spinach, chopped
  • Salt & pepper to taste

Instructions

  • Season the Salmon
    • Pat the salmon fillets dry with a paper towel.
    • Season both sides with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Sear the Salmon
    • Heat olive oil in a large skillet over medium-high heat.
    • Sear the salmon fillets for 3-4 minutes per side until golden brown. Remove and set aside.
  • Make the Sauce
    • In the same skillet, melt butter over medium heat.
    • Add minced garlic and cook for 30 seconds until fragrant.
    • Pour in chicken broth and scrape up any browned bits from the pan.
    • Stir in heavy cream, Parmesan cheese, chili flakes, sun-dried tomatoes, and dried basil.
    • Simmer for 3-4 minutes until slightly thickened.
  • Add Spinach & Return the Salmon
    • Stir in chopped spinach and cook until wilted.
    • Return the seared salmon to the skillet, spooning the sauce over the fillets.
    • Simmer for 2-3 minutes until the salmon is cooked through.
  • Serve & Enjoy
    • Garnish with extra Parmesan cheese and serve over pasta, rice, or mashed potatoes.

  • For a lighter version, use half-and-half instead of heavy cream.
  • Want extra spice? Add an extra pinch of chili flakes.
