For the Salmon
- 4 salmon fillets (6 oz each, skinless or with skin)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- Salt & pepper to taste
For the Sauce
- 2 tablespoons unsalted butter
- 3–4 garlic cloves, minced
- 1 cup heavy cream
- ⅓ cup chicken broth (or vegetable broth)
- ½ cup grated Parmesan cheese
- ½ teaspoon chili flakes (optional)
- ½ cup sun-dried tomatoes, chopped
- 1 teaspoon dried basil (or Italian seasoning)
- ½ cup fresh spinach, chopped
- Salt & pepper to taste
Instructions
- Season the Salmon
- Pat the salmon fillets dry with a paper towel.
- Season both sides with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Sear the Salmon
- Heat olive oil in a large skillet over medium-high heat.
- Sear the salmon fillets for 3-4 minutes per side until golden brown. Remove and set aside.
- Make the Sauce
- In the same skillet, melt butter over medium heat.
- Add minced garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth and scrape up any browned bits from the pan.
- Stir in heavy cream, Parmesan cheese, chili flakes, sun-dried tomatoes, and dried basil.
- Simmer for 3-4 minutes until slightly thickened.
- Add Spinach & Return the Salmon
- Stir in chopped spinach and cook until wilted.
- Return the seared salmon to the skillet, spooning the sauce over the fillets.
- Simmer for 2-3 minutes until the salmon is cooked through.
- Serve & Enjoy
- Garnish with extra Parmesan cheese and serve over pasta, rice, or mashed potatoes.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Want extra spice? Add an extra pinch of chili flakes.
