Description

A creamy and flavorful chicken soup that is perfect for any occasion, known as Marry Me Chicken Soup.


Ingredients

  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 6 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic, carrots, and celery. Cook for another 5 minutes until the vegetables start to soften.
  3. Add the dried thyme, oregano, and red pepper flakes (if using). Stir to combine and cook for 1 minute until fragrant.
  4. Pour in the chicken broth and bring to a boil. Add the chicken breasts and reduce the heat to a simmer. Cover and cook for 20-25 minutes, or until the chicken is cooked through.
  5. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  6. Stir in the heavy cream and frozen peas. Cook for an additional 5-10 minutes until heated through. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

  • For a lighter version, substitute heavy cream with half-and-half or coconut milk.
