These Lemon Oatmeal Cookies are bursting with citrus flavor and comforting textures, making them a delightful treat for any occasion. They’re easy to whip up and perfect for sharing—or keeping all to yourself!

Ingredients

Scale
  • 1 cup all-purpose flour
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup butter, softened
  • 1 ⅓ cups granulated sugar, divided
  • 1 teaspoon lemon extract
  • Grated zest from 1 medium lemon
  • 1 ½ cups old-fashioned oats, uncooked

Instructions

  • Preheat the Oven

    • Preheat your oven to 350°F (175°C).
    • Line a baking sheet with parchment paper or a silicone baking mat.
  • Prepare the Dry Ingredients

    • In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  • Cream the Butter and Sugar

    • In a large mixing bowl, cream the softened butter with 1 cup of granulated sugar using a hand or stand mixer. Beat until the mixture is light and fluffy (2-3 minutes).
    • Add the lemon extract and grated lemon zest, mixing until fully incorporated.
  • Combine Wet and Dry Ingredients

    • Gradually mix the dry ingredients into the butter mixture until just combined.
    • Fold in the old-fashioned oats until evenly distributed throughout the dough.
  • Shape the Cookies

    • Using a tablespoon or cookie scoop, portion out the dough and roll each portion into a ball.
    • Roll the dough balls in the remaining ⅓ cup of granulated sugar for a sparkly finish.
    • Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake the Cookies

    • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set.
    • Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a stronger lemon flavor, add a bit more lemon zest or extract.
  • To prevent the cookies from spreading too much, chill the dough for 15-20 minutes before baking.
  • Store cookies in an airtight container at room temperature for up to 5 days, or freeze for longer storage.
