Instructions
1. Prepare the Vegetables:
- In a bowl, mix the shredded cabbage, shredded carrot, and chopped spring onions until well combined.
2. Mix with Egg:
- Crack the egg into the bowl with the vegetables and mix until fully combined.
3. Cook the Egg-Veggie Mixture:
- Heat a small non-stick pan over medium heat and melt a little butter.
- Pour the egg and vegetable mixture into the pan, shaping it to fit your bread slices.
- Cook for 2-3 minutes on each side until golden brown and fully set.
4. Toast the Bread:
- In the same pan, add more butter and toast the bread slices until crispy and golden on both sides.
5. Assemble the Sandwich:
- Place one toasted bread slice on a plate.
- Add a slice of cheese, then place the cooked egg and vegetable mixture on top.
- Add another slice of cheese (optional), then drizzle with ketchup and mayonnaise.
- Top with the second slice of toasted bread.
6. Serve & Enjoy:
- Slice in half and serve hot. Enjoy the crispy bread, creamy sauce, and flavorful filling!
