  • 1 egg

  • 2 slices of bread
  • Butter (for toasting)

For the Sauce:

  • Ketchup
  • Mayonnaise

Instructions

1. Prepare the Vegetables:

  • In a bowl, mix the shredded cabbage, shredded carrot, and chopped spring onions until well combined.

2. Mix with Egg:

  • Crack the egg into the bowl with the vegetables and mix until fully combined.

3. Cook the Egg-Veggie Mixture:

  • Heat a small non-stick pan over medium heat and melt a little butter.
  • Pour the egg and vegetable mixture into the pan, shaping it to fit your bread slices.
  • Cook for 2-3 minutes on each side until golden brown and fully set.

4. Toast the Bread:

  • In the same pan, add more butter and toast the bread slices until crispy and golden on both sides.

5. Assemble the Sandwich:

  • Place one toasted bread slice on a plate.
  • Add a slice of cheese, then place the cooked egg and vegetable mixture on top.
  • Add another slice of cheese (optional), then drizzle with ketchup and mayonnaise.
  • Top with the second slice of toasted bread.

6. Serve & Enjoy:

  • Slice in half and serve hot. Enjoy the crispy bread, creamy sauce, and flavorful filling!
