Ingredients

Scale
  • 3 potatoes, peeled and diced
  • 2 glasses of water
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • A handful of coriander and parsley, chopped
  • ½ teaspoon chili flakes (optional)
  • 1.5 cups semolina
  • Salt, to taste
  • Vegetable oil, for frying

Instructions

1. Prepare the Potatoes

  • Place the diced potatoes in a pot with 2 glasses of water.
  • Bring to a boil and cook for 10-15 minutes, until tender but firm.
  • Drain and set aside.

2. Sauté the Aromatics

  • Heat a bit of vegetable oil in a frying pan over medium heat.
  • Add the chopped onion and minced garlic, sautéing until the onion turns soft and fragrant.

3. Combine the Ingredients

  • In a large mixing bowl, combine:
    • Cooked potatoes
    • Sautéed onion and garlic
    • Chopped coriander and parsley
    • Chili flakes, if using
  • Gradually add the semolina, mixing until well combined.
  • Season with salt to taste.

4. Shape the Potato Bites

  • Take small portions of the mixture and roll them into bite-sized balls or patties.

5. Fry the Potato Bites

  • Heat vegetable oil in a deep frying pan over medium-high heat.
  • Carefully add the potato bites in batches, ensuring they don’t overcrowd the pan.
  • Fry for 3-4 minutes per batch, until golden brown and crispy.
  • Remove with a slotted spoon and drain on paper towels.

6. Serve and Enjoy!

  • Serve hot, garnished with extra chopped herbs.
  • Pair with garlic aioli, spicy ketchup, or sour cream for extra flavor.

Notes

  • For a healthier version, try baking at 400°F (200°C) for 20 minutes or air-frying at 375°F (190°C) for 12 minutes.
  • To make it spicier, increase the chili flakes or add a pinch of cayenne pepper.
  • Store leftovers in an airtight container and reheat in an oven or air fryer for best results.
