Instructions

  • Prepare the Ingredients: Slice zucchinis into 1/4-inch rounds. Grate the cheese and set it aside.
  • Set Up the Breading Station:
    • Place flour in one bowl.
    • Beat the eggs in a second bowl and season with salt and pepper.
    • Mix grated cheese with a small amount of flour in a third bowl.
  • Coat the Zucchini:
    • Dredge zucchini rounds in flour, coating lightly.
    • Dip in beaten eggs, letting excess drip off.
    • Press into the cheese mixture, coating both sides well.
  • Fry the Zucchini:
    • Heat oil in a frying pan over medium-high heat.
    • Fry each round for 2-3 minutes per side, until golden brown and crispy.
