- 100g cheese, grated
- 1 tsp fresh parsley, chopped
- 1 tsp paprika
- 3 eggs
- 100g breadcrumbs
- 50g flour
- Olive oil or plant oil (for frying)
Instructions
- Prepare the Zucchini: Grate the zucchini and sprinkle with salt. Let it sit for 10 minutes, then squeeze out excess moisture using a clean cloth.
- Mix the Ingredients: In a bowl, beat the eggs and mix in the cheese, parsley, and paprika. Add the drained zucchini and stir.
- Add Dry Ingredients: Gradually mix in flour and breadcrumbs until the batter holds together. Season with black pepper and additional salt if needed.
- Shape the Fritters: Form small patties from the mixture.
- Fry Until Golden: Heat oil in a skillet over medium-high heat. Fry the fritters for 3-4 minutes per side until golden brown and crispy.
- Drain and Serve: Remove from oil and place on a paper towel-lined plate. Serve hot with your favorite dipping sauce.
Notes
- For extra crispiness, add a little more breadcrumbs.
- Try different cheeses like cheddar, feta, or gouda for unique flavors.
- These fritters can also be baked at 200°C (400°F) for 20 minutes, flipping halfway.
