  • 100g cheese, grated
  • 1 tsp fresh parsley, chopped
  • 1 tsp paprika
  • 3 eggs
  • 100g breadcrumbs
  • 50g flour
  • Olive oil or plant oil (for frying)

Instructions

  • Prepare the Zucchini: Grate the zucchini and sprinkle with salt. Let it sit for 10 minutes, then squeeze out excess moisture using a clean cloth.
  • Mix the Ingredients: In a bowl, beat the eggs and mix in the cheese, parsley, and paprika. Add the drained zucchini and stir.
  • Add Dry Ingredients: Gradually mix in flour and breadcrumbs until the batter holds together. Season with black pepper and additional salt if needed.
  • Shape the Fritters: Form small patties from the mixture.
  • Fry Until Golden: Heat oil in a skillet over medium-high heat. Fry the fritters for 3-4 minutes per side until golden brown and crispy.
