  • 200g carrots
  • 300g potatoes
  • Green garlic (to taste)
  • 23 garlic cloves (minced)
  • 100g grated cheese

Instructions

  • Prepare the Vegetables: Wash the zucchini, carrots, and potatoes. Peel the carrots and potatoes, then grate all the vegetables into a large mixing bowl.
  • Remove Excess Moisture: Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture to ensure crispy fritters.
  • Mix the Ingredients: Add the grated carrots and potatoes to the bowl. Mince the garlic cloves and finely chop the green garlic, then mix them in with the grated cheese. Season with salt and pepper.
  • Form the Fritters: Take small portions of the mixture and shape them into patties.
  • Cook the Fritters: Heat a non-stick skillet over medium heat with a small amount of oil. Fry the fritters for 3-4 minutes per side until golden brown and crispy.
  • Serve and Enjoy: Transfer to a paper towel-lined plate to drain excess oil. Serve warm with Greek yogurt, garlic dip, or ketchup.

Notes

  • For extra crispiness, remove as much moisture as possible from the zucchini.
  • To bake instead of frying, place on a baking sheet and bake at 200°C (400°F) for 20 minutes, flipping halfway.
