Description

Indulge in these rich, chocolatey No-Sugar Oat and Date Bites, a guilt-free snack perfect for satisfying your sweet tooth. Naturally sweetened with dates, packed with oats and walnuts, and coated in velvety sugar-free dark chocolate, these bites are a healthy treat you’ll want to make again and again. They’re quick, easy, and loaded with nutrients, making them ideal for any time of day.

Ingredients

Scale
  • 150 grams (5.3 ounces) of pitted dates (natural sweetness and binding agent)
  • 80 grams (2.8 ounces) of rolled oats (adds fiber and texture)
  • 50 grams (2 ounces) of walnuts (for the mixture; adds crunch and healthy fats)
  • 100 grams (3.5 ounces) of sugar-free dark chocolate (for coating)
  • 1 tablespoon of vegetable oil (helps with mixing and chocolate consistency)
  • 30 grams (1 ounce) of walnuts (for decoration; extra crunch)

Instructions

1. Prepare the Date Mixture

  • Add the pitted dates, rolled oats, and 50 grams of walnuts to a food processor.
  • Pulse the ingredients until they form a sticky, cohesive dough. If needed, add a teaspoon of water to help the mixture bind.

2. Shape the Bites

  • Lightly coat your hands with a small amount of vegetable oil to prevent sticking.
  • Scoop small portions of the mixture and roll them into bite-sized balls.
  • Place the balls on a tray lined with parchment paper to make them easy to handle.

3. Melt the Chocolate

  • In a small saucepan, melt the sugar-free dark chocolate with 1 tablespoon of vegetable oil over low heat.
  • Stir continuously to avoid burning and to achieve a smooth, glossy consistency.

4. Coat the Bites

  • Dip each date ball into the melted chocolate, ensuring it is evenly coated.
  • Return the chocolate-coated bites to the parchment-lined tray.

5. Add the Walnut Topping

  • Sprinkle the remaining 30 grams of chopped walnuts over each bite while the chocolate is still warm.
  • Gently press the walnuts into the chocolate to ensure they stick.

6. Set the Bites

  • Allow the chocolate to set at room temperature, or place the tray in the refrigerator for about 15 minutes to speed up the process.

7. Serve and Enjoy

  • Once the chocolate has fully set, your No-Sugar Oat and Date Bites are ready to enjoy.
  • Store any leftovers in an airtight container in the refrigerator for up to one week.

Notes

  • If your dates are dry, soak them in warm water for 10 minutes to soften before blending.
  • Feel free to substitute walnuts with almonds, pecans, or hazelnuts.
  • For added flavor, sprinkle a pinch of sea salt over the bites after coating them in chocolate.
