Ingredients
Scale
- 150 grams (5.3 ounces) of pitted dates (natural sweetness and binding agent)
- 80 grams (2.8 ounces) of rolled oats (adds fiber and texture)
- 50 grams (2 ounces) of walnuts (for the mixture; adds crunch and healthy fats)
- 100 grams (3.5 ounces) of sugar-free dark chocolate (for coating)
- 1 tablespoon of vegetable oil (helps with mixing and chocolate consistency)
- 30 grams (1 ounce) of walnuts (for decoration; extra crunch)
Instructions
1. Prepare the Date Mixture
- Add the pitted dates, rolled oats, and 50 grams of walnuts to a food processor.
- Pulse the ingredients until they form a sticky, cohesive dough. If needed, add a teaspoon of water to help the mixture bind.
2. Shape the Bites
- Lightly coat your hands with a small amount of vegetable oil to prevent sticking.
- Scoop small portions of the mixture and roll them into bite-sized balls.
- Place the balls on a tray lined with parchment paper to make them easy to handle.
3. Melt the Chocolate
- In a small saucepan, melt the sugar-free dark chocolate with 1 tablespoon of vegetable oil over low heat.
- Stir continuously to avoid burning and to achieve a smooth, glossy consistency.
4. Coat the Bites
- Dip each date ball into the melted chocolate, ensuring it is evenly coated.
- Return the chocolate-coated bites to the parchment-lined tray.
5. Add the Walnut Topping
- Sprinkle the remaining 30 grams of chopped walnuts over each bite while the chocolate is still warm.
- Gently press the walnuts into the chocolate to ensure they stick.
6. Set the Bites
- Allow the chocolate to set at room temperature, or place the tray in the refrigerator for about 15 minutes to speed up the process.
7. Serve and Enjoy
- Once the chocolate has fully set, your No-Sugar Oat and Date Bites are ready to enjoy.
- Store any leftovers in an airtight container in the refrigerator for up to one week.
Notes
- If your dates are dry, soak them in warm water for 10 minutes to soften before blending.
- Feel free to substitute walnuts with almonds, pecans, or hazelnuts.
- For added flavor, sprinkle a pinch of sea salt over the bites after coating them in chocolate.
