Instructions

  1. Prepare the Vegetables:  Wash and cube the eggplants. Peel and slice the onions thinly. Wash and dice the tomatoes. Mince the garlic. Chop the fresh parsley.
  2. Sauté the Onions and Garlic: Heat olive oil in a large pan over medium heat. Add sliced onions and minced garlic, cooking until soft and translucent (about 5 minutes).
  3. Cook the Eggplant: Add cubed eggplants to the pan and stir. Cook for 10 minutes, stirring occasionally, until tender and slightly browned.
  4. Add the Tomatoes and Seasoning: Stir in diced tomatoes and season with salt and black pepper to taste. Cook for another 10 minutes, allowing the tomatoes to break down into a rich sauce.
  5. Finish with Fresh Parsley: Stir in chopped parsley, reserving some for garnish.
  6. Serve with Greek Yogurt:  Transfer to a serving dish and top with Greek yogurt and fresh parsley.
