Description

Ingredients

  • 2 large russet potatoes (about 1 pound)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 hot dog buns
  • Cooking oil for frying
  • Ketchup and mustard for serving


Instructions

  1. Begin by peeling the russet potatoes and cutting them into quarters. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain and let cool slightly.
  2. In a large bowl, mash the cooked potatoes until smooth. Stir in the shredded cheddar cheese, crumbled bacon, chopped green onions, garlic powder, onion powder, salt, and pepper until well combined.
  3. Divide the potato mixture into four equal portions. Shape each portion around a hot dog, ensuring the potato mixture fully encases the hot dog.
  4. Heat about 1 inch of cooking oil in a deep skillet over medium heat. Once the oil is hot, carefully add the potato-wrapped hot dogs, cooking in batches if necessary. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
  5. Serve the Idaho potato dogs in hot dog buns with ketchup and mustard on the side.
