For the Honey Butter Glaze:

  • ¼ cup melted butter
  • 2 tablespoons honey

Instructions

  1. Preheat & Prepare – Preheat the oven to 375°F (190°C) and grease a mini muffin tin. Chill the tin while making the batter to prevent sticking.
  2. Mix Dry Ingredients – In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. Whisk Wet Ingredients – In a separate bowl, whisk together the milk, melted butter, honey, and egg until well combined.
  4. Combine & Fold – Gently mix the wet ingredients into the dry ingredients, stirring just until combined. Fold in the corn kernels.
  5. Fill the TinSpoon the batter into the mini muffin cups, filling each about ¾ full.
  6. Bake – Bake for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
  7. Prepare the Glaze – While the poppers bake, whisk together melted butter and honey for the glaze.
