For the Honey Butter Glaze:
- ¼ cup melted butter
- 2 tablespoons honey
Instructions
- Preheat & Prepare – Preheat the oven to 375°F (190°C) and grease a mini muffin tin. Chill the tin while making the batter to prevent sticking.
- Mix Dry Ingredients – In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- Whisk Wet Ingredients – In a separate bowl, whisk together the milk, melted butter, honey, and egg until well combined.
- Combine & Fold – Gently mix the wet ingredients into the dry ingredients, stirring just until combined. Fold in the corn kernels.
- Fill the Tin – Spoon the batter into the mini muffin cups, filling each about ¾ full.
- Bake – Bake for 12-15 minutes, or until a toothpick inserted in the center comes out clean.
- Prepare the Glaze – While the poppers bake, whisk together melted butter and honey for the glaze.
- Glaze & Serve – Brush warm poppers with honey butter glaze and serve immediately.
