Description

A delicious and healthy treat packed with protein and mixed berries, perfect for breakfast or a snack.


Ingredients

  • 2 cups mixed berries (fresh or frozen, such as blueberries, strawberries, and raspberries)
  • 1 cup rolled oats
  • 1 cup Greek yogurt (plain or vanilla)
  • 1 cup milk (dairy or non-dairy)
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs


Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
  2. In a large bowl, combine the rolled oats, protein powder, baking powder, cinnamon, and salt. Mix well.
  3. In another bowl, whisk together the Greek yogurt, milk, honey (or maple syrup), vanilla extract, and eggs until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the mixed berries.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Allow to cool for about 10 minutes before slicing into squares. Serve warm or at room temperature.

Notes

  • For a sweeter bake, increase the honey or maple syrup to 1/3 cup.
  • Try adding a tablespoon of chia seeds or flaxseeds for extra fiber and nutrition.
