Ingredients

Scale
  • 3 ribs celery, finely chopped
  • 2 carrots, finely chopped
  • 1 onion, finely chopped
  • 5 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 (8-ounce) brick cream cheese, cubed
  • 3 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1.5 teaspoons table salt
  • 1 teaspoon ground black pepper

For Finishing:

  • 1 green bell pepper, finely chopped
  • 1 cup finely grated Parmesan cheese (plus extra for garnish)

Instructions

  • Sauté the Aromatics

    • Heat olive oil in a large pot over medium heat.
    • Add celery, carrots, and onion and sauté for 5-7 minutes until softened.
    • Stir in garlic and cook for 1-2 minutes until fragrant.
  • Add the Broth and Tomato Paste

    • Stir in the tomato paste, ensuring it’s well combined.
    • Pour in the chicken broth and bring to a gentle boil.
  • Simmer the Soup

    • Reduce heat to medium-low and let the soup simmer for 15-20 minutes to develop flavor.
  • Add the Cream Cheese

    • Add cubed cream cheese, stirring continuously until it melts completely.
  • Season the Soup

    • Stir in salt and black pepper.
    • Taste and adjust seasoning as needed.
  • Finish with Fresh Vegetables and Cheese

    • Stir in green bell pepper and grated Parmesan cheese.
    • Simmer for another 5 minutes until the bell pepper is tender and the cheese is melted.
  • Serve and Enjoy

    • Ladle the soup into bowls.
    • Sprinkle with extra Parmesan cheese for garnish.
    • Serve hot with crusty bread or crackers.

Notes

  • For a thicker texture, blend half of the soup before adding the cheese.
  • Make it vegetarian by using vegetable broth instead of chicken broth.
  • For extra protein, add shredded chicken or white beans.
  • Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
  • Reheat on the stovetop over medium heat, stirring occasionally.
