  • 1 (14.5 oz) can diced tomatoes
  • 6 cups chicken broth (or vegetable broth for vegetarian)
  • 1 cup French lentils (or brown/green lentils)
  • ½ teaspoon dried thyme
  • 2 bay leaves
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook the Bacon
    • Heat a large pot over medium heat. Add the finely chopped bacon and cook until crispy.
    • Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.
  2. Sauté the Vegetables
    • Add olive oil to the pot, then sauté the onion, celery, and carrots for about 5 minutes, stirring occasionally, until softened and fragrant.
  3. Build the Flavor
    • Add chopped garlic and cook for 1 minute.
    • Stir in the diced tomatoes, allowing their juices to deglaze the pot and lift flavorful bits.
  4. Simmer the Soup
    • Pour in the chicken broth. Add lentils, thyme, and bay leaves. Stir to combine.
    • Season with salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 25–30 minutes, or until lentils are tender.
  5. Finish and Serve
    • Taste and adjust seasoning as needed.
    • Stir in fresh parsley and sprinkle crispy bacon on top.
    • Serve warm with crusty bread or a simple green salad.
