- 2 bay leaves

Instructions
- Cook the Bacon
- Heat a large pot over medium heat. Add the finely chopped bacon and cook until crispy.
- Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.
- Sauté the Vegetables
- Add olive oil to the pot, then sauté the onion, celery, and carrots for about 5 minutes, stirring occasionally, until softened and fragrant.
- Build the Flavor
- Add chopped garlic and cook for 1 minute.
- Stir in the diced tomatoes, allowing their juices to deglaze the pot and lift flavorful bits.
- Simmer the Soup
- Pour in the chicken broth. Add lentils, thyme, and bay leaves. Stir to combine.
- Season with salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 25–30 minutes, or until lentils are tender.
- Finish and Serve
- Taste and adjust seasoning as needed.
- Stir in fresh parsley and sprinkle crispy bacon on top.
