Ingredients
- 1 lb ground beef
- 1 large onion (diced)
- 4 cloves garlic (minced)
- 1/4 cup fresh parsley (chopped)
- 1 can (15 ounces diced tomatoes)
- 1 can (15 ounces tomato sauce or tomato puree)
- 3 oz tomato paste
- 4 cups chicken broth
- 8 oz bowtie pasta
- 1 tbsp Italian seasoning
- 1 tsp sea salt
- Black pepper (to taste)
- 1 tbsp olive oil (or preferred oil)
- 2 oz mozzarella cheese (shredded)
- 1/4 cup Parmesan cheese (grated)
- 1/2 cup ricotta cheese
- 1 cup water
- Extra parsley (grated cheese, or a dollop of ricotta)
Instructions
1. Cook the Ground Beef: Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up into small pieces as it cooks. Remove any excess fat.
2. Sauté the Aromatics: Add the diced onion and minced garlic to the pot with the beef. Sauté for 2–3 minutes, stirring frequently, until fragrant and softened.
3. Add the Tomato Base: Stir in the diced tomatoes, tomato sauce or puree, tomato paste, Italian seasoning, sea salt, and black pepper. Cook for 2–3 minutes to let the flavors meld together.
4. Add the Liquids: Pour in the chicken broth and water. Stir well and bring the mixture to a boil.
5. Cook the Pasta: Add the bowtie pasta to the boiling soup. Reduce the heat to medium and let it simmer for 10–12 minutes, or until the pasta is tender.
6. Incorporate the Cheese: Stir in the Parmesan cheese and mozzarella cheese until melted and evenly distributed. Add the fresh parsley for extra flavor.
7. Serve and Garnish: Ladle the soup into bowls and top each serving with a dollop of ricotta cheese. Garnish with extra parsley, grated Parmesan, or mozzarella if desired. Serve hot and enjoy!
Notes
- Make It Ahead: This soup stores beautifully in the fridge for up to 3 days. Reheat gently on the stovetop or microwave, adding a splash of broth or water if needed.
- Freezing Tips: If you plan to freeze the soup, do so without the pasta. When reheating, cook the pasta fresh and stir it in.
- Customization: Feel free to switch the bowtie pasta for rotini, penne, or even broken lasagna noodles for a more authentic lasagna feel.
- Vegetarian Option: Swap the ground beef for plant-based meat or lentils and use vegetable broth instead of chicken broth.
- Spicy Twist: Add a pinch of crushed red pepper flakes for some heat.
