- 6 eggs
- 80 ml (3 fl oz) milk
- Salt, pepper, and paprika, to taste
- Vegetable oil, for frying
Instructions
- Prepare the Potatoes: Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the diced potatoes, season with salt, pepper, and paprika, and cook for 10-12 minutes until golden brown and tender, stirring occasionally.
- Add the Onions and Garlic: Stir in the sliced onion and garlic and cook for 3-4 minutes, until softened and fragrant.
- Cook the Sausage: Add the sliced sausage to the skillet and cook for 3-4 minutes until browned and flavorful.
- Prepare the Egg Mixture: In a bowl, whisk together the eggs and milk until combined.
- Add the Eggs: Pour the egg mixture over the skillet, gently stirring to combine. Cook for 3-5 minutes until the eggs are just set.
- Serve and Enjoy: Remove from heat, garnish with fresh herbs or paprika, and serve hot.
