Instructions
- Prepare Ingredients: Wash, peel, and chop all vegetables as specified. Rinse the lentils and split peas under cold water.
- Add Ingredients to Crockpot: In a large crockpot, add butternut squash, carrots, potatoes, celery, green lentils, split peas (or extra lentils), onion, garlic, and herbs de Provence. Pour in 8–10 cups of broth, ensuring that all ingredients are well-submerged.
