  • 1 tsp dried thyme
  • 1/2 tsp dried basil
  • Salt and pepper (to taste)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Cook the Vegetables: In a spacious pot, warm the olive oil over medium heat. Introduce the diced onion, carrots, and celery. Sauté for 5 to 7 minutes, stirring intermittently, until the vegetables are tender and fragrant.
  2. Add Garlic and Cabbage: Add the minced garlic and chopped cabbage to the pot. Stir and cook for another 3-4 minutes, allowing the cabbage to soften slightly.
  3. Incorporate Remaining Vegetables and Seasoning: Add the diced potato (if using) and bell pepper, then pour in the can of diced tomatoes and the broth. Stir in the thyme and basil.
