Ingredients
Scale
- 2 tbsp olive oil
- 1 large onion (chopped)
- 2 carrots (peeled and sliced)
- 2 celery stalks (chopped)
- 3 cloves garlic (minced)
- 1/2 head of cabbage (chopped (about 500 g))
- 1 large potato (diced (optional))
- 1 bell pepper (diced)
- 1 can (400 g diced tomatoes)
- 1.5 liters vegetable or chicken broth
- 1 tsp dried thyme
- 1/2 tsp dried basil
- Salt and pepper (to taste)
- Fresh parsley (chopped, for garnish)
Instructions
- Cook the Vegetables: In a spacious pot, warm the olive oil over medium heat. Introduce the diced onion, carrots, and celery. Sauté for 5 to 7 minutes, stirring intermittently, until the vegetables are tender and fragrant.
- Add Garlic and Cabbage: Add the minced garlic and chopped cabbage to the pot. Stir and cook for another 3-4 minutes, allowing the cabbage to soften slightly.
- Incorporate Remaining Vegetables and Seasoning: Add the diced potato (if using) and bell pepper, then pour in the can of diced tomatoes and the broth. Stir in the thyme and basil.
- Simmer: Bring the soup to a boil, then reduce the heat to a gentle simmer. Cover the pot and allow it to simmer for 20 to 25 minutes, or until the vegetables are fork-tender.
- Finish and Garnish: Taste the soup and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
