  • 1 ounce sunflower seeds (chopped)
  • 1 tablespoon natural honey
  • 2.8 ounces dark chocolate (sugar-free optional, melted)

Instructions

Step 1: Prepare the Ingredients

  • Soak the pitted dates in warm water for 10 minutes to soften them. Drain well before use.
  • Roughly chop the salted peanuts, pumpkin seeds, and sunflower seeds for added texture.

Step 2: Blend the Mixture

  • Add the softened dates to a food processor and blend until they form a smooth, sticky paste.
  • Add the oatmeal and raisins to the food processor. Pulse a few times until well combined.

Step 3: Combine Everything

  • Transfer the date mixture to a mixing bowl. Add the chopped peanuts, pumpkin seeds, sunflower seeds, and natural honey. Mix until the ingredients are fully combined into a sticky dough.

Step 4: Shape the Candies

  • Scoop out small portions of the mixture and roll them into balls using your hands. Alternatively, press the mixture into a parchment-lined tray and cut into bite-sized squares.

Step 5: Add the Chocolate Coating

  • Melt the dark chocolate in a microwave (20-30 second intervals, stirring after each) or using a double boiler.
  • Dip each ball or square into the melted chocolate for a full coating, or drizzle the chocolate on top for a lighter finish.

Step 6: Set the Candies

  • Place the chocolate-coated candies on a tray lined with parchment paper. Chill in the refrigerator for 15-20 minutes until the chocolate hardens.
