Ingredients
Scale
- 1 pound ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 cup sour cream
- 2 tablespoons all-purpose flour
- 1 teaspoon paprika
- Salt and pepper, to taste
- 8 ounces spiral pasta (rotini or fusilli)
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the spiral pasta until al dente according to package instructions. Drain and set aside.
- Brown the Ground Beef
- Heat 1 tablespoon olive oil in a large skillet over medium heat.
- Add the ground beef and cook, breaking it into small pieces, until browned.
- Season with salt and pepper, then transfer the beef to a plate and set aside.
- Sauté the Vegetables
- In the same skillet, heat the remaining olive oil.
- Add diced onion and minced garlic, cooking until softened and fragrant.
- Add sliced mushrooms and sauté until they release their moisture and begin to brown.
- Make the Sauce
- Sprinkle the flour over the sautéed vegetables and stir to coat evenly.
- Gradually pour in the beef broth, stirring constantly to avoid lumps.
- Add Worcestershire sauce, paprika, and a pinch of salt and pepper. Cook until the sauce thickens slightly.
- Combine the Ingredients
- Return the cooked ground beef to the skillet and stir into the sauce.
- Reduce the heat to low and gently fold in the sour cream until fully incorporated.
- Add the Pasta
- Toss the cooked pasta into the skillet, stirring to coat each piece with the creamy sauce.
- Cook for 2-3 minutes to let the flavors meld together.
- Garnish and Serve
- Transfer the hamburger stroganoff to a serving dish.
- Garnish with freshly chopped parsley and serve warm.
Notes
- To prevent sour cream from curdling, add it at the end over low heat.
- If the sauce is too thick, thin it with a splash of beef broth or milk.
- Fresh mushrooms add the best flavor, but canned mushrooms can be used in a pinch.
