Ingredients

  • 120g (4 oz) rolled oats, ground into flour
  • ¼ teaspoon baking powder
  • A pinch of salt
  • 80g (2.8 oz) natural yogurt
  • 40ml coconut oil, melted
  • 30ml maple syrup
  • 1 egg
  • 30g (1 oz) dried cranberries, chopped
  • Chopped nuts for decoration (optional)

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 180°C (350°F).
  2. Lightly grease a donut pan with melted coconut oil or non-stick spray to ensure the donuts don’t stick.

Step 2: Prepare the Oat Flour

  1. Place rolled oats in a blender or food processor.
  2. Blend until the oats are finely ground into a flour-like consistency.

Step 3: Mix the Dry Ingredients

  1. In a large mixing bowl, combine the oat flour, baking powder, and a pinch of salt.
  2. Stir to evenly distribute the dry ingredients.

Step 4: Mix the Wet Ingredients

  1. In a separate bowl, whisk together the yogurt, melted coconut oil, maple syrup, and egg until smooth and fully combined.

Step 5: Combine Wet and Dry Ingredients

  1. Gradually pour the wet mixture into the bowl with the dry ingredients.
  2. Stir gently until you form a thick, smooth batter. Avoid overmixing.
  3. Fold in the chopped dried cranberries to add a pop of natural sweetness.

Step 6: Fill the Donut Pan

  1. Spoon the batter into the greased donut pan, filling each mold about three-quarters of the way full.
  2. Smooth the tops with the back of the spoon for even baking.

Step 7: Bake the Donuts

  1. Place the donut pan in the preheated oven and bake for 12-15 minutes, or until the donuts are golden brown.
  2. To check for doneness, insert a toothpick into the center—it should come out clean.

Step 8: Cool and Decorate

  1. Remove the donut pan from the oven and let the donuts cool in the pan for 5 minutes.
  2. Transfer the donuts to a wire rack to cool completely.
  3. Optionally, sprinkle chopped nuts over the cooled donuts or drizzle with melted dark chocolate for extra flavor.
