- ¼ cup all-purpose flour
- 8 egg yolks
- 1 cup cooked white rice
- 1 cup diced, cooked chicken meat
- Lemon slices (for garnish)
Instructions
- Prepare the Base
- Heat chicken broth over medium heat in a large pot.
- Add carrots, onion, and celery. Cook until vegetables are tender.
- Stir in chicken soup base and white pepper.
- Make the Roux
- Melt margarine in a pan over low heat.
- Gradually whisk in flour until smooth.
- Stir the roux into the simmering broth until the soup thickens.
- Add Rice and Chicken
- Mix in cooked rice and diced chicken.
- Simmer on low heat to meld flavors.
- Prepare the Egg-Lemon Mixture
- Temper the Eggs
- Slowly add hot broth to the egg-lemon mixture while whisking to prevent curdling.
- Pour the tempered mixture back into the soup and stir gently.
- Serve
