For the Spinach Mixture:
- 500g fresh spinach
- 1 tbsp olive oil
- 1 red onion, finely chopped
- 2 cloves garlic, minced
- ½ tsp chili pepper (optional)
- 3 eggs
- 120ml milk
- 150g flour
- ½ tsp baking powder
- Salt & black pepper to taste
- 200g Greek feta cheese, crumbled
- 100g grated mozzarella cheese
- A handful of fresh parsley, chopped
For Greasing the Baking Dish:
- 1 tbsp olive oil
Instructions
1. Prepare the Spinach
- Wash the spinach under running water to remove dirt.
- Heat 1 tbsp olive oil in a large pan over medium heat.
- Add the spinach and cook until wilted (about 5 minutes).
- Remove from heat, let it cool, and chop finely.
2. Sauté the Aromatics
- In the same pan, heat another drizzle of olive oil over medium heat.
- Add chopped onion and cook until soft and translucent (about 5 minutes).
- Stir in minced garlic and chili pepper (if using), cooking for another 2 minutes.
3. Make the Batter
- In a large mixing bowl, whisk together the eggs and milk.
- Gradually add flour and baking powder, whisking until smooth.
4. Combine Everything
- Stir in the chopped spinach and sautéed onion mixture.
- Add crumbled feta and grated mozzarella, mixing well.
- Stir in chopped fresh parsley and season with salt and black pepper.
5. Bake the Spinach Mixture
- Preheat oven to 180°C (350°F).
- Lightly grease a baking dish with olive oil.
- Pour the spinach mixture into the dish, spreading evenly.
- Bake for 30-35 minutes, or until the top is golden brown and set.
6. Serve and Enjoy
- Allow the dish to cool for 5 minutes before slicing.
- Garnish with fresh parsley and serve warm.

- Use fresh spinach for the best texture—but if using frozen, thaw and drain well.
- Don’t overmix the batter; a light mix keeps the texture fluffy.
