For the Spinach Mixture:

  • 500g fresh spinach
  • 1 tbsp olive oil
  • 1 red onion, finely chopped
  • 2 cloves garlic, minced
  • ½ tsp chili pepper (optional)
  • 3 eggs
  • 120ml milk
  • 150g flour
  • ½ tsp baking powder
  • Salt & black pepper to taste
  • 200g Greek feta cheese, crumbled
  • 100g grated mozzarella cheese
  • A handful of fresh parsley, chopped

For Greasing the Baking Dish:

  • 1 tbsp olive oil

Instructions

1. Prepare the Spinach

  • Wash the spinach under running water to remove dirt.
  • Heat 1 tbsp olive oil in a large pan over medium heat.
  • Add the spinach and cook until wilted (about 5 minutes).
  • Remove from heat, let it cool, and chop finely.

2. Sauté the Aromatics

  • In the same pan, heat another drizzle of olive oil over medium heat.
  • Add chopped onion and cook until soft and translucent (about 5 minutes).
  • Stir in minced garlic and chili pepper (if using), cooking for another 2 minutes.

3. Make the Batter

  • In a large mixing bowl, whisk together the eggs and milk.
  • Gradually add flour and baking powder, whisking until smooth.

4. Combine Everything

  • Stir in the chopped spinach and sautéed onion mixture.
  • Add crumbled feta and grated mozzarella, mixing well.
  • Stir in chopped fresh parsley and season with salt and black pepper.

5. Bake the Spinach Mixture

  • Preheat oven to 180°C (350°F).
  • Lightly grease a baking dish with olive oil.
  • Pour the spinach mixture into the dish, spreading evenly.
  • Bake for 30-35 minutes, or until the top is golden brown and set.

6. Serve and Enjoy

  • Allow the dish to cool for 5 minutes before slicing.
  • Garnish with fresh parsley and serve warm.

  • Use fresh spinach for the best texture—but if using frozen, thaw and drain well.
