Ingredients

Scale

For the Filling:

  • 1 large potato (180 grams), peeled and diced
  • 1/4 teaspoon black pepper powder (optional, for a hint of spice)
  • A pinch of salt, to taste

For the Bread Pockets:

  • 8 slices of white bread, crusts removed
  • Mozzarella cheese, shredded or cubed (to taste)

For Coating and Frying:

  • 1 egg, beaten
  • 200 grams bread crumbs
  • Oil, for frying

Instructions

Step 1: Prepare the Potato Filling

  1. Boil the Potato: In a medium-sized pot, boil the diced potato in salted water for 10-12 minutes, or until fork-tender. Drain the water.
  2. Mash and Season: Mash the cooked potato until smooth. Stir in black pepper (if using) and salt to taste.

Step 2: Assemble the Bread Pockets

  1. Prepare the Bread: Lay the white bread slices on a flat surface. Use a rolling pin to flatten each slice slightly.
  2. Add the Filling: Place a spoonful of mashed potato mixture in the center of each slice, followed by a small amount of mozzarella cheese.
  3. Seal the Pockets: Fold the bread slice into a triangle or rectangle, covering the filling completely. Dampen the edges with water or milk and press firmly to seal.

Step 3: Coat the Bread Pockets

  1. Dip in Egg: Dip each sealed bread pocket into the beaten egg, ensuring it is fully coated.
  2. Coat with Bread Crumbs: Roll the bread pocket in bread crumbs, pressing gently to ensure an even coating.

Step 4: Fry the Bread Pockets

  1. Heat the Oil: Heat oil in a deep frying pan until a small piece of bread dropped in sizzles immediately.
  2. Fry Until Golden: Fry the bread pockets in batches, turning occasionally, for 2-3 minutes per side or until golden brown and crispy.
  3. Drain Excess Oil: Remove the bread pockets from the oil and place them on a plate lined with paper towels to drain.

Step 5: Serve
Serve the bread pockets warm with your favorite dipping sauces, such as ketchup, marinara, or garlic aioli.

Notes

  • For a healthier alternative, bake the bread pockets in a preheated oven at 200°C (400°F) for 12-15 minutes, flipping halfway through.
  • Whole wheat bread can be used instead of white bread for a healthier option.
  • Ensure the edges of the bread are sealed tightly to prevent the filling from spilling out during frying.
