Instructions

  1. Prepare the Potatoes: Preheat your oven to 450°F (230°C). Peel the potatoes and cut them into thick rounds, about 1 inch thick. Gently blot the pieces with a paper towel to absorb any excess moisture.
  2. Sear the Potatoes : In a large, oven-safe skillet, heat the vegetable oil and 2 tablespoons of butter over medium-high heat. Add the potato rounds in a single layer and cook for 3-4 minutes on each side, until they are golden brown and crispy.
  3. Add Flavor and Roast: Once the potatoes are browned, add the remaining butter, crushed garlic, and fresh thyme sprigs to the skillet. Pour the chicken stock over the potatoes, ensuring the garlic and thyme are evenly distributed in the liquid.
  4. Bake the Potatoes: Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the potatoes are tender inside and the stock has reduced to create a thick, buttery glaze. Baste the potatoes once or twice during baking with the sauce in the skillet for extra flavor.
