  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ⅓ cup grated Parmesan cheese
  • ½ teaspoon salt

Instructions

  1. Preheat the Oven
    • Preheat your oven to 400°F (200°C).
    • Line a large baking sheet with parchment paper or lightly grease it with olive oil.
  2. Prepare the Chicken
    • Pat the chicken dry with paper towels.
    • In a small bowl, mix Italian seasoning, smoked paprika, salt, and black pepper.
    • Rub the chicken with olive oil, then coat evenly with the seasoning mixture.
  3. Season the Potatoes
    • In a large bowl, toss the halved potatoes with olive oil, minced garlic, grated Parmesan cheese, salt, and black pepper.
    • Mix well to coat the potatoes evenly with the flavorful mixture.
  4. Assemble on the Baking Sheet
    • Place the seasoned chicken on one side of the baking sheet.
    • Spread the potatoes on the other side in a single layer to ensure even cooking.
  5. Bake the Chicken and Potatoes
    • Roast in the preheated oven for 25–30 minutes, flipping the potatoes halfway through for even browning.
    • Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
  6. Broil for Extra Crispiness
    • In the last 5 minutes of cooking, sprinkle extra Parmesan cheese over the chicken and potatoes.
    • Broil on high for 2–3 minutes to create a golden, crispy crust.
  7. Garnish and Serve
    • Remove the baking sheet from the oven and let everything rest for a few minutes.
