Ingredients

  • 8 ounces mushrooms, sliced (such as cremini or button)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup vegetable broth or pasta cooking water
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (plus extra for serving)
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Cook the fettuccine or spaghetti according to package instructions in a large pot of salted boiling water. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the sliced mushrooms to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are browned and tender.
  4. Stir in the dried thyme and red pepper flakes (if using), and cook for another minute.
  5. Pour in the vegetable broth or reserved pasta water, and bring to a simmer. Let it cook for 2-3 minutes to reduce slightly.
  6. Lower the heat and stir in the heavy cream, mixing well. Season with salt and pepper to taste.
  7. Add the cooked pasta to the skillet and toss to combine, ensuring the pasta is well coated with the sauce.
  8. Stir in the grated Parmesan cheese until melted and creamy.
  9. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
