Description
A quick and flavorful roasted zucchini recipe withgarlic, lemon zest, and parmesan for a perfect side dish to complement any meal.
Ingredients
Scale
- 1½ lbs zucchini (about 4–5 small/medium zucchini, sliced into rounds or halves)
- 2 tablespoons olive oil
- Zest of 1 small lemon (about 1 teaspoon)
- 2 cloves garlic (crushed or finely minced)
- ¾ cup finely shredded parmesan cheese
- Salt and freshly ground black pepper (to taste)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
- Slice the Zucchini: Cut the zucchini into rounds or halves, depending on your preference. Aim for consistent thickness to ensure even roasting.
- Mix Seasoning: In a large bowl, toss the zucchini with olive oil, lemon zest, and minced garlic.
- Add Parmesan: Sprinkle the shredded parmesan cheese over the zucchini, tossing gently to ensure an even coating.
- Arrange on Baking Sheet: Spread the seasoned zucchini in a single layer on the prepared baking sheet, ensuring they aren’t too crowded. This allows them to roast evenly.
- Bake: Roast in the preheated oven for 15–18 minutes, or until the zucchini is tender and the parmesan is golden and crispy.
- Serve Immediately: Transfer the roasted zucchini to a serving dish and enjoy it hot. For added brightness, garnish with a sprinkle of fresh lemon zest or parsley if desired.
Notes
- Crispier Option: Broil for an additional 2-3 minutes at the end for extra crispiness.
- Cheese Substitute: Pecorino Romano works as a stronger-flavored alternative to parmesan.
- Spicy Variation: Add a pinch of red pepper flakes to the seasoning mix for a little heat.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best texture.
