Ingredients

  • Cooking oil (neutral oil with a high smoke point, e.g., grapeseed oil)
  • Garlic (fresh and finely minced for maximum flavor)
  • Scallions (white part for sauce, green part for garnish)
  • Vegetable broth (low-sodium for better flavor control)
  • Light soy sauce (adds depth and umami)
  • Dark soy sauce (provides a richer, caramelized color and taste)
  • Chinese black vinegar (balances the spice with a slight tang)
  • Korean chilli powder/flakes (gochugaru, mildly spicy with a vibrant red hue)
  • Toasted sesame seeds (for garnish and added nuttiness)
  • Additional chilli flakes (optional for extra heat)

Instructions

  1. Sauté the Aromatics: Heat a small frying pan over low heat. Add cooking oil, sliced scallion (white part), and minced garlic. Sauté gently for 5 minutes, stirring constantly to prevent burning.
  2. Simmer the Sauce: Add vegetable broth, light soy sauce, dark soy sauce, black vinegar, and Korean chilli flakes to the pan. Stir well and bring to a gentle simmer over medium-low heat for 5 minutes.
  3. Cook the Noodles: While the sauce simmers, cook the noodles in boiling water according to package instructions. Drain thoroughly.
  4. Combine and Serve: Pour the garlic chilli sauce over the drained noodles. Toss well until every strand is evenly coated. Garnish with scallion (green part), toasted sesame seeds, and extra chilli flakes. Serve hot and enjoy!
