Instructions

- Prepare & Sear the Chicken: In a shallow bowl, mix gluten-free flour, salt, and pepper. Coat each piece of chicken evenly. In the same pan, cook the chicken on medium heat until golden brown and nearly cooked through. Remove from pan and set aside.
- Create the Sauce: Pour chicken broth into the pan, scraping up any brown bits. Stir in Dijon mustard and let the sauce reduce by half.
- Combine Everything: Return the seared chicken to the pan, letting it soak up the sauce. Top each piece with caramelized onions and a generous sprinkle of Gruyere cheese. Cover the pan and let the cheese melt.
