Instructions
1. Prepare the Vegetables
- Grate the zucchini, carrot, and potato using a box grater or food processor.
- Squeeze out excess moisture from the zucchini using a clean kitchen towel.
2. Mix the Ingredients
- In a large mixing bowl, combine the grated vegetables with the beaten eggs.
- Season with salt and black pepper, then mix well.
3. Shape the Chops
- Take a small handful of the mixture and form it into a patty.
- Repeat until you have around 8-10 zucchini chops.
4. Coat with Breadcrumbs
- Pour the breadcrumbs onto a plate.
- Press each zucchini chop into the breadcrumbs, coating evenly.
5. Fry the Chops
- Heat olive oil in a non-stick skillet over medium heat.
- Place the zucchini chops in the pan, frying for 3-4 minutes per side until golden and crispy.
6. Serve & Enjoy!
- Remove from heat and place on a serving plate.
