- 450g zucchini, grated
- 50g carrots, grated
- ½ onion, finely chopped
- 1 clove garlic, minced
- ½ bunch fresh parsley, chopped
- 2 tbsp flaxseeds
- 4 tbsp starch (cornstarch or potato starch)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp red pepper flakes
- ½ tsp cumin
Instructions
Step 1: Prepare the Vegetables
- Grate the zucchini and carrots into a large bowl.
- Finely chop the onion and mince the garlic, then add them to the bowl.
- Chop the parsley and mix it in with the other ingredients.
Step 2: Make the Flaxseed Mixture
- In a small bowl, mix flaxseeds with a few tablespoons of water and let sit for 5-10 minutes until it becomes gelatinous.
Step 3: Combine the Ingredients
- Add the flaxseed mixture to the vegetables.
- Stir in the starch, salt, black pepper, red pepper flakes, and cumin.
- Mix thoroughly until the mixture holds together.
Step 4: Shape the Patties
- Take a handful of the mixture and shape it into small patties.
- Place the patties on a baking sheet lined with parchment paper.
Step 5: Cook the Patties
Option 1: Pan-Frying
- Heat a non-stick skillet with a small amount of oil over medium heat.
- Cook each patty for 3-4 minutes per side, until golden brown and crispy.
Option 2: Baking
- Preheat the oven to 180°C (350°F).
- Arrange patties on a lightly greased baking sheet.
- Bake for 20-25 minutes, flipping halfway through.
Step 6: Serve & Enjoy!
- Serve hot, garnished with fresh parsley and your favorite dipping sauce.
Notes
- For extra crispiness, squeeze out excess water from the grated zucchini before mixing.
- Make it spicy by adding chili powder or diced jalapeños.
