  • 450g zucchini, grated
  • 50g carrots, grated
  • ½ onion, finely chopped
  • 1 clove garlic, minced
  • ½ bunch fresh parsley, chopped
  • 2 tbsp flaxseeds
  • 4 tbsp starch (cornstarch or potato starch)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp red pepper flakes
  • ½ tsp cumin

Instructions

Step 1: Prepare the Vegetables

  • Grate the zucchini and carrots into a large bowl.
  • Finely chop the onion and mince the garlic, then add them to the bowl.
  • Chop the parsley and mix it in with the other ingredients.

Step 2: Make the Flaxseed Mixture

  • In a small bowl, mix flaxseeds with a few tablespoons of water and let sit for 5-10 minutes until it becomes gelatinous.

Step 3: Combine the Ingredients

  • Add the flaxseed mixture to the vegetables.
  • Stir in the starch, salt, black pepper, red pepper flakes, and cumin.
  • Mix thoroughly until the mixture holds together.

Step 4: Shape the Patties

  • Take a handful of the mixture and shape it into small patties.
  • Place the patties on a baking sheet lined with parchment paper.

Step 5: Cook the Patties

Option 1: Pan-Frying

  • Heat a non-stick skillet with a small amount of oil over medium heat.
  • Cook each patty for 3-4 minutes per side, until golden brown and crispy.

Option 2: Baking

  • Preheat the oven to 180°C (350°F).
  • Arrange patties on a lightly greased baking sheet.
  • Bake for 20-25 minutes, flipping halfway through.

  • Serve hot, garnished with fresh parsley and your favorite dipping sauce.
