For the Casserole:
- 1 head of broccoli, cut into florets
- 500g (17.6 oz) potatoes, peeled and diced
- 1 teaspoon salt (for potatoes)
- 40g (1.4 oz) Parmesan cheese, grated
- 55g (2 tbsp) butter
- 50g (2 tbsp) all-purpose flour
- 2 cups (500 ml) milk
- 1 teaspoon salt (for sauce)
- ½ teaspoon nutmeg
- Olive oil (for greasing)
- Mozzarella cheese, shredded (for topping)
For the Yogurt Sauce:
- 2 tbsp Greek yogurt or sour cream
- 1 tbsp mayonnaise
- 1 clove garlic, minced
- Fresh dill, chopped
- Fresh parsley, chopped
Instructions
1. Prepare the Vegetables
- Boil the potatoes in salted water for 7 minutes, then drain and set aside.
- Blanch the broccoli florets in boiling salted water for 2-3 minutes until just tender. Drain and set aside.
2. Make the Cheese Sauce
- In a saucepan, melt the butter over medium heat.
- Stir in the flour and whisk for 1-2 minutes to create a roux.
- Gradually add milk, whisking continuously to prevent lumps.
- Cook until thickened, then season with salt and nutmeg.
- Remove from heat and stir in grated Parmesan cheese.
3. Assemble the Casserole
- Preheat the oven to 180°C (350°F).
- Lightly grease a baking dish with olive oil.
- Arrange potatoes in an even layer, followed by broccoli.
- Pour the cheese sauce evenly over the top.
- Sprinkle generously with shredded mozzarella cheese.
4. Bake the Casserole
- Bake for 35 minutes until the top is golden and bubbly.
5. Prepare the Yogurt Sauce
- In a bowl, mix together Greek yogurt, mayonnaise, garlic, dill, and parsley. Stir well.
