For the Casserole:
  • 1 head of broccoli, cut into florets
  • 500g (17.6 oz) potatoes, peeled and diced
  • 1 teaspoon salt (for potatoes)
  • 40g (1.4 oz) Parmesan cheese, grated
  • 55g (2 tbsp) butter
  • 50g (2 tbsp) all-purpose flour
  • 2 cups (500 ml) milk
  • 1 teaspoon salt (for sauce)
  • ½ teaspoon nutmeg
  • Olive oil (for greasing)
  • Mozzarella cheese, shredded (for topping)
For the Yogurt Sauce:
  • 2 tbsp Greek yogurt or sour cream
  • 1 tbsp mayonnaise
  • 1 clove garlic, minced
  • Fresh dill, chopped
  • Fresh parsley, chopped

Instructions

1. Prepare the Vegetables
  • Boil the potatoes in salted water for 7 minutes, then drain and set aside.
  • Blanch the broccoli florets in boiling salted water for 2-3 minutes until just tender. Drain and set aside.
2. Make the Cheese Sauce
  • In a saucepan, melt the butter over medium heat.
  • Stir in the flour and whisk for 1-2 minutes to create a roux.
  • Gradually add milk, whisking continuously to prevent lumps.
  • Cook until thickened, then season with salt and nutmeg.
  • Remove from heat and stir in grated Parmesan cheese.
3. Assemble the Casserole
  • Preheat the oven to 180°C (350°F).
  • Lightly grease a baking dish with olive oil.
  • Arrange potatoes in an even layer, followed by broccoli.
  • Pour the cheese sauce evenly over the top.
  • Sprinkle generously with shredded mozzarella cheese.
4. Bake the Casserole
  • Bake for 35 minutes until the top is golden and bubbly.
5. Prepare the Yogurt Sauce
  • In a bowl, mix together Greek yogurt, mayonnaise, garlic, dill, and parsley. Stir well.
6. Serve and Enjoy
  • Let the casserole cool slightly before serving.
