- 1.2 liters (6 cups) water

Instructions
1. Prepare the Vegetables
- Chop the onion finely.
- Dice the green, red, and yellow bell peppers.
- Grate the carrot using a coarse grater.
- Peel and dice the potatoes into small cubes.
2. Cook the Soup
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and sauté until soft and translucent (about 5 minutes).
- Stir in the diced bell peppers and grated carrot, and cook for 3-4 minutes until softened.
- Add the diced potatoes and stir to coat them in the flavors.
- Pour in 1.2 liters (6 cups) of water and bring the soup to a boil.
- Season with salt and black pepper to taste.
