  • 1 yellow bell pepper, diced
  • 3 potatoes, diced
  • 1.2 liters (6 cups) water
  • Salt and black pepper to taste

Instructions

1. Prepare the Vegetables

  1. Chop the onion finely.
  2. Dice the green, red, and yellow bell peppers.
  3. Grate the carrot using a coarse grater.
  4. Peel and dice the potatoes into small cubes.

2. Cook the Soup

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and sauté until soft and translucent (about 5 minutes).
  3. Stir in the diced bell peppers and grated carrot, and cook for 3-4 minutes until softened.
  4. Add the diced potatoes and stir to coat them in the flavors.
  5. Pour in 1.2 liters (6 cups) of water and bring the soup to a boil.
  6. Season with salt and black pepper to taste.
