  • 1 cup frozen spinach, thawed and squeezed dry
  • ½ cup crumbled feta cheese
  • ½ cup shredded cheddar cheese
  • 6 large eggs
  • 1 cup milk
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  • Preheat Oven: Set your oven to 375°F (190°C). Grease a pie dish or baking dish with olive oil.
  • Sauté Vegetables: In a skillet, heat olive oil over medium heat. Add onions and mushrooms, cooking until golden (5-7 minutes). Stir in garlic and cook for 1 minute. Remove from heat.
  • Prepare Spinach: Thaw and squeeze out excess moisture from the frozen spinach.
