- 1 cup mushrooms, sliced

- 1 cup frozen spinach, thawed and squeezed dry
- ½ cup crumbled feta cheese
- ½ cup shredded cheddar cheese
- 6 large eggs
- 1 cup milk
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Preheat Oven: Set your oven to 375°F (190°C). Grease a pie dish or baking dish with olive oil.
- Sauté Vegetables: In a skillet, heat olive oil over medium heat. Add onions and mushrooms, cooking until golden (5-7 minutes). Stir in garlic and cook for 1 minute. Remove from heat.
- Prepare Spinach: Thaw and squeeze out excess moisture from the frozen spinach.
- Whisk the Eggs: In a mixing bowl, whisk together eggs, milk, salt, and pepper.
- Combine Ingredients: Add sautéed vegetables, spinach, feta, and cheddar cheese to the egg mixture. Mix well.
- Bake the Quiche: Pour mixture into the prepared dish. Bake for 30-35 minutes, or until set and golden on top.
