Instructions

Step 1: Prepare the Jars

  1. Wash jars, lids, and rings in hot, soapy water. Rinse well.
  2. Sterilize the jars by boiling them in a large pot for 10 minutes. Keep them warm until use.

Step 2: Make the Spiced Syrup

  1. In a large pot, combine sugar, vinegar, and water.
  2. Heat over medium-high until the sugar is fully dissolved.
  3. Add cinnamon sticks, cloves, star anise, and cardamom.
  4. Simmer for 5 minutes to infuse the flavors.

Step 3: Prepare the Apples

  1. Peel and core the apples, then slice them into ¼-inch rings.
  2. Soak the rings in a bowl of water with lemon juice to prevent browning.

Step 4: Cook the Apples

  1. Add the apple rings to the simmering syrup.
  2. Cook for 3-5 minutes until slightly tender but still firm.

Step 5: Pack the Jars

  1. Using a slotted spoon, pack the warm apple rings into sterilized jars.
  2. Add one cinnamon stick to each jar.

Step 6: Seal and Process the Jars

  1. Wipe the rims clean, then place lids and rings on tightly.
