Ingredients

Seafood:

  • Heavy cream – 1/2 cup
  • Chicken stock – 3/4 cup
  • Dijon mustard – 1 tablespoon
  • White wine – A splash
  • Flour – For thickening

Seasonings:

  • Garlic powder – 1/2 teaspoon
  • Onion powder – 1/2 teaspoon
  • Black pepper – 1/4 teaspoon
  • Old Bay seasoning – 1/2 teaspoon (optional)

Instructions

  • Prepare the Seafood:
    • Rinse flounder, shrimp, scallops, and crabmeat under cold water. Pat dry. Divide flounder fillets into two portions.
  • Sauté the Seafood:
    • Melt 2 tablespoons of butter in a skillet over medium heat.
    • Add shrimp and scallops; cook 2-3 minutes per side until golden. Deglaze with white wine. Remove seafood and set aside.
  • Make the Sauce:
    • In the same skillet, melt 4 tablespoons of butter.
    • Stir in flour to create a roux. Gradually whisk in chicken stock and heavy cream until smooth.
    • Add Dijon mustard, garlic powder, onion powder, and black pepper. Simmer for 3-5 minutes until thickened.
  • Assemble the Casserole:
    • Preheat oven to 375°F (190°C).
    • Layer flounder fillets in a baking dish.
    • Top with shrimp, scallops, and crabmeat. Pour creamy sauce evenly over seafood. Sprinkle with Old Bay seasoning and parsley.
  • Bake the Casserole:
    • Cover dish with foil and bake for 20 minutes.
    • Remove foil and bake for an additional 10 minutes until the top is lightly browned.
