Ingredients
Seafood:
- Flounder fillets, divided – 4 ounces

- Chicken stock – 3/4 cup
- Dijon mustard – 1 tablespoon

Instructions
- Prepare the Seafood:
- Rinse flounder, shrimp, scallops, and crabmeat under cold water. Pat dry. Divide flounder fillets into two portions.
- Sauté the Seafood:
- Melt 2 tablespoons of butter in a skillet over medium heat.
- Add shrimp and scallops; cook 2-3 minutes per side until golden. Deglaze with white wine. Remove seafood and set aside.
- Make the Sauce:
- In the same skillet, melt 4 tablespoons of butter.
- Stir in flour to create a roux. Gradually whisk in chicken stock and heavy cream until smooth.

- Assemble the Casserole:

- Layer flounder fillets in a baking dish.
- Top with shrimp, scallops, and crabmeat. Pour creamy sauce evenly over seafood. Sprinkle with Old Bay seasoning and parsley.
- Bake the Casserole:
- Cover dish with foil and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes until the top is lightly browned.
