- ¼ cup bell pepper (chopped)
- Half one Roma tomato
- ¼ cup Mexican cheese blend (shredded)
- Sour cream
- Salsa or pico de gallo
- Chopped fresh cilantro
- Sliced avocado

Instructions
- Whisk the Eggs: In a small bowl, whisk together the eggs and milk until well combined. Add a dash of salt and pepper according to your preference. Set aside.
- Sauté the Vegetables: In a medium-sized non-stick frying pan, warm the olive oil over medium heat. When the oil is hot, toss in the diced yellow onion and bell pepper. Sauté for about 3-4 minutes until the veggies are tender. Then, incorporate the chopped Roma tomato and continue cooking for an additional 1-2 minutes.
- Cook the Omelette: Pour the egg mixture into the skillet, making sure it spreads evenly over the sautéed vegetables. Let the eggs cook for about 2-3 minutes, or until the edges begin to set and the center is slightly firm.
- Add the Cheese: Sprinkle the shredded Mexican cheese evenly over one half of the omelette. Let it cook for another minute or until the cheese starts to melt and the eggs are fully set.
- Fold and Serve: Gently fold the omelette in half, covering the cheesy side with the other half. Slide the omelette onto a plate.
- Add Toppings: Top the omelette with your choice of garnishes: a dollop of sour cream, a spoonful of salsa or pico de gallo, chopped fresh cilantro, sliced avocado, and diced jalapeños for some heat.
