  • 4 cups 500g bread flour or all-purpose flour
  • 2 ¼ teaspoons 7g active dry yeast or instant yeast
  • 2 teaspoons 10g salt
  • 1 ¾ cups 415ml warm water
  • ¼ cup 60ml extra virgin olive oil, plus extra for drizzling
  • 2 tablespoons fresh rosemary leaves
  • Coarse sea salt for sprinkling

Instructions

  • Activate the Yeast: In a large mixing bowl, combine the warm water and yeast. Let it sit for 5 minutes until frothy.
  • Make the Dough: Add the flour, salt, and olive oil to the yeast mixture. Stir until a sticky dough forms. Transfer to a floured surface and knead for 8–10 minutes until smooth and elastic. (Or use a stand mixer with a dough hook for 5–6 minutes.)
  • First Rise: Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.
  • Prepare the Baking Pan: Grease a 9×13-inch baking pan with olive oil. Transfer the risen dough to the pan and gently stretch it to fit. Cover and let it rise again for 30–40 minutes.
  • Add Toppings: Preheat the oven to 400°F (200°C). Use your fingers to create dimples in the dough. Drizzle generously with olive oil and sprinkle fresh rosemary and coarse sea salt on top.
  • Bake the Focaccia: Bake for 20–25 minutes, or until golden brown and crispy at the edges.
  • Cool and Serve: Let the focaccia cool slightly before slicing. Serve warm or at room temperature with olive oil for dipping.

  • For extra flavor: Infuse olive oil with garlic before drizzling it over the dough.
