- 4 tomatoes (sliced)
- 1–2 teaspoons salt
- 1 tablespoon butter
- ½ cup onion (chopped)
- 1 clove garlic (minced)
- ½ teaspoon black pepper
- 2 tablespoons fresh oregano (chopped)
- 6–7 leaves basil (chopped)
- 2 cups mozzarella cheese (shredded (plus extra for topping))
- 2 eggs (beaten)
Instructions
- Prepare the Tomatoes: Place the sliced tomatoes in a single layer on paper towels. Sprinkle with salt and let them sit for 10-15 minutes to release excess moisture. Pat the tomatoes dry with additional paper towels.
- Sauté the Aromatics: Preheat the oven to 375°F (190°C). In a skillet, melt the butter over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and sauté for 1 minute until fragrant. Remove from heat.
- Assemble the Pie: In a greased pie dish, layer half of the tomato slices evenly. Sprinkle with half of the black pepper, oregano, basil, and mozzarella cheese. Repeat with the remaining tomato slices and herbs.
- Add the Eggs and Cheese: Beat the eggs in a bowl and pour them evenly over the layered tomatoes and cheese. Sprinkle additional mozzarella cheese over the top for extra gooeyness.
- Bake the Pie: Bake in the preheated oven for 25-30 minutes, or until the eggs are set, and the cheese is melted and golden on top.
