  • 4 tomatoes (sliced)
  • 12 teaspoons salt
  • 1 tablespoon butter
  • ½ cup onion (chopped)
  • 1 clove garlic (minced)
  • ½ teaspoon black pepper
  • 2 tablespoons fresh oregano (chopped)
  • 67 leaves basil (chopped)
  • 2 cups mozzarella cheese (shredded (plus extra for topping))
  • 2 eggs (beaten)

Instructions

  1. Prepare the Tomatoes: Place the sliced tomatoes in a single layer on paper towels. Sprinkle with salt and let them sit for 10-15 minutes to release excess moisture. Pat the tomatoes dry with additional paper towels.
  2. Sauté the Aromatics: Preheat the oven to 375°F (190°C). In a skillet, melt the butter over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and sauté for 1 minute until fragrant. Remove from heat.
  3. Assemble the Pie: In a greased pie dish, layer half of the tomato slices evenly. Sprinkle with half of the black pepper, oregano, basil, and mozzarella cheese. Repeat with the remaining tomato slices and herbs.
  4. Add the Eggs and Cheese: Beat the eggs in a bowl and pour them evenly over the layered tomatoes and cheese. Sprinkle additional mozzarella cheese over the top for extra gooeyness.
  5. Bake the Pie: Bake in the preheated oven for 25-30 minutes, or until the eggs are set, and the cheese is melted and golden on top.
  6. Cool and Serve: Let the pie cool for 5-10 minutes before slicing. Serve warm and enjoy!
