  • Yield: 4 servings 1x

Description

These Easy Crispy Parmesan Potato Slices are the perfect combination of crunchy, cheesy, and flavorful goodness. Thinly sliced potatoes are tossed with olive oil, garlic, onion, and herbs, then roasted to golden perfection with freshly grated parmesan. Perfect as a snack, side dish, or appetizer, they’re easy to make and incredibly satisfying!

Ingredients

Scale
  • 4 medium potatoes, scrubbed but not peeled
  • 4 tablespoons olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper
  • ½ teaspoon dried parsley
  • Salt, to taste
  • 4 tablespoons grated fresh parmesan cheese, divided

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Slice the potatoes into ¼-inch thick rounds using a sharp knife or mandoline slicer. Keeping them uniform ensures even cooking.
  3. Season the potatoes by tossing them in a large bowl with olive oil, garlic powder, onion powder, black pepper, dried parsley, and salt. Mix well to coat evenly.
  4. Arrange the slices in a single layer on the prepared baking sheet, ensuring they do not overlap.
  5. Sprinkle half of the grated parmesan cheese evenly over the potatoes before baking.
  6. Bake for 15-20 minutes, then carefully flip each slice using tongs or a spatula.
  7. Sprinkle the remaining parmesan over the flipped slices and continue baking for another 15-20 minutes, or until the potatoes are golden brown and crispy.
  8. Cool for a few minutes before serving. Enjoy warm with your favorite dipping sauce!

Notes

  • Crispier Texture: For extra crunch, broil for the last 2 minutes of baking.
  • Potato Choices: Russet potatoes provide crispiness, while Yukon Gold offers a creamier bite.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 375°F (190°C) for 8-10 minutes for the best texture.
  • Dipping Ideas: Serve with garlic aioli, ranch, or spicy sriracha mayo for extra flavor!
