  • Salt and pepper, to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Make the sauce: In a small bowl, whisk together Dijon mustard, honey, olive oil, apple cider vinegar (or lemon juice), minced garlic, thyme, salt, and pepper.
  • Coat the chicken: Place the chicken breasts in a baking dish and pour the honey Dijon mixture over them. Use a spoon or brush to spread the marinade evenly.
  • Bake: Cover the dish with foil and bake for 20-25 minutes. Remove the foil and bake for another 5-10 minutes until the glaze thickens and caramelizes.
  • Check for doneness: Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C). If you don’t have a thermometer, slice the thickest part of a chicken breast to check that it’s cooked through.
