Description

This Dublin Pea Salad is a creamy, crunchy, and flavorful dish inspired by Irish cuisine. It combines sweet peas, crisp peppers, hard-boiled eggs, and aged Irish cheese with a tangy homemade dressing. Perfect for potlucks, holiday meals, or a refreshing side dish, this easy-to-make salad is ready in under an hour and can be prepared in advance for even better flavor.

Ingredients

Scale

For the Salad:

  • ½ sweet onion, finely chopped
  • 2 (12 oz) bags frozen peas, thawed
  • 3 hard-boiled eggs, diced
  • 5 sweet peppers, diced
  • 1 ½ cups aged Irish cheese, shredded or diced

For the Dressing:

  • ½ cup mayonnaise
  • ¼ cup sweet relish
  • 1 teaspoon salt
  • 2 teaspoons spicy mustard
  • 1 teaspoon dried thyme

Instructions

Prepare the Ingredients

  1. Finely chop the sweet onion and dice the sweet peppers for added crunch.
  2. Peel and dice the hard-boiled eggs.
  3. Shred or dice the Irish cheese into small, bite-sized pieces.
  4. Thaw the frozen peas by running them under cold water and draining well.

Make the Dressing

  1. In a small mixing bowl, combine mayonnaise, sweet relish, spicy mustard, salt, and dried thyme.
  2. Whisk until the dressing is smooth and fully blended.

Assemble the Salad

  1. In a large mixing bowl, combine the peas, onions, peppers, eggs, and cheese.
  2. Pour the dressing over the mixture and gently toss until everything is well coated.

Chill & Serve

  1. Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld.
  2. Serve chilled and garnish with extra cheese or fresh herbs if desired.

Notes

  • Use fresh or frozen peas – Avoid canned peas, as they may become too soft.
  • Choose a high-quality aged Irish cheese – Dubliner or sharp cheddar works best.
  • Customize the dressing – Add more mustard for extra spice or increase the relish for a sweeter touch.
  • For a healthier version, swap mayonnaise with Greek yogurt or a light mayo alternative.
