- 1 teaspoon thyme
- 5 tablespoons flour
- 1 teaspoon baking powder
- Black pepper, to taste
- Fresh chives, chopped
- Fresh dill, chopped
- Olive oil, for cooking

Instructions
1. Prepare the Zucchini
- Grate the zucchinis into a large bowl.
- Sprinkle with a small amount of salt and let sit for 10 minutes to draw out excess moisture.
2. Drain Excess Moisture
- After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much water as possible.
3. Mix the Ingredients
- In a separate bowl, whisk the eggs until smooth.
- Add the grated cheese, chives, dill, thyme, black pepper, and a pinch of salt.
- Stir well to combine all ingredients.
4. Combine Everything
- Add the drained zucchini to the egg mixture and mix thoroughly.
- Gradually add the flour and baking powder, stirring until you get a thick, batter-like consistency.
5. Cook the Zucchini Patties
- Heat a generous amount of olive oil in a large skillet over medium heat.
- Drop spoonfuls of the zucchini mixture into the pan, pressing lightly to form patties.
- Fry for 3-4 minutes per side, or until golden brown and crispy.
