  • Fresh chives, chopped
  • Fresh dill, chopped
  • Olive oil, for cooking

Instructions

1. Prepare the Zucchini

  1. Grate the zucchinis into a large bowl.
  2. Sprinkle with a small amount of salt and let sit for 10 minutes to draw out excess moisture.

2. Drain Excess Moisture

  1. After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much water as possible.

3. Mix the Ingredients

  1. In a separate bowl, whisk the eggs until smooth.
  2. Add the grated cheese, chives, dill, thyme, black pepper, and a pinch of salt.
  3. Stir well to combine all ingredients.

4. Combine Everything

  1. Add the drained zucchini to the egg mixture and mix thoroughly.
  2. Gradually add the flour and baking powder, stirring until you get a thick, batter-like consistency.

5. Cook the Zucchini Patties

  1. Heat a generous amount of olive oil in a large skillet over medium heat.
