  • 34 small chicken breasts
  • 3 tablespoons avocado oil, coconut oil, or olive oil (divided)
  • 1 large yellow onion, diced
  • 45 large celery stalks, sliced
  • 2 large carrots, peeled and chopped
  • 1 red bell pepper, diced
  • 8 cups organic chicken broth or bone broth
  • ½ teaspoon turmeric powder
  • 1½ teaspoons sea salt
  • 15 ounces cooked chickpeas or white beans, drained and rinsed
  • 2 cups organic broccoli florets (bite-size)

Instructions

1. Cook the Chicken

  • Heat 1 tablespoon of oil in a large pot over medium heat.
  • Add chicken breasts and cook for 7-10 minutes per side, until fully cooked.
  • Remove from pot, let cool, and shred into bite-sized pieces.

2. Sauté the Vegetables

  • Add remaining 2 tablespoons of oil to the pot.
  • Stir in onion, celery, carrots, and bell pepper.
  • Cook for 5-7 minutes, until soft and fragrant.

3. Add Broth & Spices

  • Pour in chicken broth or bone broth and stir well.
  • Sprinkle in turmeric powder and sea salt.

4. Add Chickpeas & Broccoli

  • Stir in chickpeas (or white beans) and broccoli florets.
  • Bring soup to a gentle simmer and cook for 15-20 minutes.

5. Add Shredded Chicken

  • Return shredded chicken to the pot and let it warm for 5 minutes.

6. Serve & Enjoy

  • Ladle into bowls and serve hot.
  • Enjoy on its own or pair with whole-grain bread or a fresh salad.

  • For a vegan option, substitute chicken with tofu or extra chickpeas and use vegetable broth.
