- 3–4 small chicken breasts
- 3 tablespoons avocado oil, coconut oil, or olive oil (divided)
- 1 large yellow onion, diced
- 4–5 large celery stalks, sliced
- 2 large carrots, peeled and chopped
- 1 red bell pepper, diced
- 8 cups organic chicken broth or bone broth
- ½ teaspoon turmeric powder
- 1½ teaspoons sea salt
- 15 ounces cooked chickpeas or white beans, drained and rinsed
- 2 cups organic broccoli florets (bite-size)
Instructions
1. Cook the Chicken
- Heat 1 tablespoon of oil in a large pot over medium heat.
- Add chicken breasts and cook for 7-10 minutes per side, until fully cooked.
- Remove from pot, let cool, and shred into bite-sized pieces.
2. Sauté the Vegetables
- Add remaining 2 tablespoons of oil to the pot.
- Stir in onion, celery, carrots, and bell pepper.
- Cook for 5-7 minutes, until soft and fragrant.
3. Add Broth & Spices
- Pour in chicken broth or bone broth and stir well.
- Sprinkle in turmeric powder and sea salt.
4. Add Chickpeas & Broccoli
- Stir in chickpeas (or white beans) and broccoli florets.
- Bring soup to a gentle simmer and cook for 15-20 minutes.
5. Add Shredded Chicken
- Return shredded chicken to the pot and let it warm for 5 minutes.
6. Serve & Enjoy

- For a vegan option, substitute chicken with tofu or extra chickpeas and use vegetable broth.
- To store, keep in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months.
