- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional)
Instructions
Step 1: Prepare the Date Mixture
- In a medium saucepan, melt 1/4 cup of butter or ghee over low heat.
- Add 2 cups of chopped dates and the optional 1/4 cup of sugar. Stir continuously for 5-7 minutes, or until the dates soften and form a thick, sticky paste.
Step 2: Incorporate Nuts and Flavorings
- Remove the saucepan from heat.
- Stir in 1 cup of chopped nuts (such as walnuts, almonds, or pecans).
- Add 1/2 teaspoon of vanilla extract and the optional 1/2 teaspoon of ground cinnamon. Mix until well combined.
Step 3: Form the Rolls
- Let the date mixture cool slightly until it’s comfortable to handle.
- Lightly grease your hands with butter or oil to prevent sticking.
- Take a small portion of the mixture and roll it into a log shape about 2 inches long. Alternatively, shape the mixture into small balls for bite-sized treats.
Step 4: Coat with Coconut
- Spread half of the 1 cup of desiccated coconut on a flat surface or shallow dish.
- Roll each log (or ball) in the coconut, pressing gently to coat evenly. Add more coconut to the dish as needed.
Step 5: Chill and Set
- Place the coconut-coated date rolls on a plate or baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to allow the rolls to firm up.
Step 6: Serve
- Once chilled, serve the date rolls as a snack, dessert, or festive treat.
- Store in an airtight container in the refrigerator for up to a week.
Notes
- For extra moisture, soak the dates in warm water for 10 minutes if they feel dry. Drain before chopping and cooking.
